Is Silicone Bakeware Safe?

Silicone bakeware is bright and flashy. With an amusing rubbery texture it can be a fun addition to any baking tradition. However, it is understandable you are concerned about "non-stick" bakeware in light of recent studies on carcinogenic chemicals in Teflon (see "Airborne Toxins"). With very little written on the subject, it can also be hard to determine the safety of the product.

Silicone bakeware is relatively new on the U.S. market. However, it has been used for years in Europe and by professional bakers. Silicone bakeware is made of Food and Drug Administration (FDA) approved food-grade silicone. According to the FDA, silicone pans and molds are appropriate for all foods. Although the Environmental Working Group (EWG) has not tested silicone bakeware, their toxicologist suggests that it is safe for use.

Praised for its flexibility and non-stick surface, the versatile molds and pans can be used in the oven, freezer and microwave. The temperature range to which silicone bakeware can be subjected varies among manufacturer accounts. Silicone melts at 930º F depending on the presence of fillers. Most companies claim silicone bakeware can sustain temperatures up to 500º F. The most conservative estimates suggest the full temperature range of silicone bakeware to be -50º F to 428º F.

There are a few pitfalls of using silicone bakeware. The molds and pans are extremely flexible when heated; therefore, a metal baking sheet should be used to support the bakeware. Additionally, although part of the appeal of silicone bakeware is its "non-stick" surface many companies suggest that the molds and pans should be coated with oil, butter or flour as per the recipe. Users of silicone baking mats that include fiberglass have also complained of the silicone peeling off.

Don't fret if silicone bakeware isn't for you. There are a number of "non-stick" alternatives on the market to fit your needs. The EWG suggests ceramic, titanium and porcelain-enameled cast iron, which are dishwasher safe and durable. Stoneware made from lead-free clay is also an option.

What are the Different Types of Bakeware?

There are many different types of bakeware, all designed for a specific end result when cooking or baking. The differences in bakeware are not just limited to the design, but also include the material from which the bakeware is constructed and the surface it is given. There are several different designs that may be specific to a recipe, but most bakeware can be used for multiple purposes.

Bakeware consists of all pans and dishes that can be used in an oven. Bakeware is made from various materials including glass, silicone, stone, cast iron, aluminum, and steel, and each type cooks differently. Bakeware constructed of ovenproof glass for instance, heats up faster and holds heat longer than metal bakeware, so it often requires a slight reduction in baking time. Similarly, silicone bakeware may require adjustments to baking time as it does not absorb the heat, but rather transfers heat evenly through the food.

Silicone also stops cooking the minute it is removed from the heat source, eliminating further browning after being removed from the oven. Everywhere you look, there is a lot of emphasis on cutting the fat out of our daily diets, but who wants to cut out the fat if it means cutting out the flavor? The Flexible Approach to Baking
Thanks to cosmetic surgery, colorful, flexible bakeware may not be the first thing you think of when you hear or see the word ‘silicone.’ Yet food-grade silicone is rapidly finding a place on our kitchen shelves. Now, there’s a whole range of eye-pleasing, brightly colored pans for baking muffins, various shaped cakes and breads. There’s even a silicone rolling pin to complete the nonstick, silicone baking experience. So what’s the big deal?

For my two young daughters, the color’s the thing, and how “feely,” or tactile, it is. For grown-ups, its inherent nonstick qualities combined with its flexibility are the key.

Theoretically, you can do away with greasing and flouring (although some makers of the bakeware suggest you still do so if the recipe requires it), making it an ideal tool for low fat baking.

The pans are undoubtedly versatile. They can be rolled up for storage, and twisted and misshapen any number of ways (though why you would want to beats me!). The pans can be used in the freezer, the microwave or the oven, and are generally dishwasher-safe. Silicone bakeware is non-porous so it doesn’t retain odors or flavors.

Silicone seems to distribute heat evenly, but as with dark metal pans or regular nonstick tins, cakes baked in silicone pans may require less time in the oven. And despite withstanding a wide range of temperatures, not all pans can withstand the highest heats.

Finally, because the pans are flexible they should be handled with care. It is best to place them on a tray or cookie sheet before filling them and taking them to the oven or freezer. Taking a filled muffin pan to the oven without doing so would be challenging to say the least.

So whether silicone bakeware is ideal for all our baking needs remains to be seen, but there seem to be enough good reasons to add a splash of color to our kitchens and be rid of those rusty old cake tins.

Food safety test of silicon bakeware

When we choose bakeware of "good quality", especially as users on the home front, we know very well that this conception often means "approved brand" and/or "a smart design".

However, when the heading mentions food safety of silicon bakeware, we refer to bakeware, which:

1) Is manufactured in accordance with good manu-facturing practise
2) Does not transfer its constituents to foodstuff in quantities which could endanger human life and change the quality, taste or colour of the foodstuff
3) Is offering highest hygiene of foodstuffs

These qualities cannot be determined by feelings but can be measured and compared with international accepted standards and guidelines.

Based on long experience within accredited testing of materials and products, including testing of metal-based cookware, we have developed a programme for testing the food safety of silicon bakeware according to the above mentioned qualities. We offer this test programme to producers as well as buyers of bakeware who want to supply the consumers with "safety data" carried out on a uniformed basis by an impartial third party.

The food safety test includes the following test procedures:

Analysis of the silicone

1) Comparison of the raw materials used with the Bundesinstitut für Risikobewertung (BfR) guidelines (XV. Silicone, section III.1).
The manufacturer of the silicone bakeware provides written documentation about the raw materials.

2) Taste and smell test according to ISO 4120-1983(E) "Sensory Analysis – Methodology – Triangular Test". According to the EU Directive 89/109/EEC, Article 2, materials and articles must not transfer their constituents to foodstuff in quantities which can change the quality, taste or colour of the foodstuff
